β (1 3) Glucan isolated from the cell wall of the yeast, Saccharomyces cerevisiae, is a kind of immunomodulating glucan.In order to understand the relationship between structure and function,the solubility,viscosity and the conformation in the solution of modified yeast glucan——CMGs were studied.The results indicated that the solubility and viscosity of CMGs increased with increment of substituting degree( DS ),while the solubility showed satisfied results when DS is higher than 0.2.The viscosity of CMGs was also affected by the content of protein.By using the helix coil transition analysis method,the results showed that λ max of CMG was longer than of dextran in the solutions of NaOH with different concentration.It was concluded that CMGs in the solution existed in the form of partial helix structure.
