摘要
研究了重组型香蕉片的配方,研究得出最佳配方为每100g香蕉果肉添加木薯淀粉60g、水48g、食盐2g、脱脂奶粉5g,即可得到高质量香蕉片。
The formula of the reorganization banana slice was studied in this paper,and the best formula is adding cassava starch 60g, water 48g, salt 2g, skim milk powder 5g in each 100g banana pulp, which could get high quality bananas slice.
