摘要
目的:建立啤酒中微量甲醛的测定新方法。方法:啤酒中的甲醛在碱性环境下与4-氨基-3-联氨-5-巯基-1,2,4-三氮杂茂(AHMT)缩合,再被高碘酸钾氧化成6-巯基-5-三氮杂茂[4,3-b]-S-四氮杂苯紫红色化合物,在550 nm测定其含量。结果:啤酒中甲醛的浓度在0.02-0.60 mg/L内,相关系数r为0.9998,加标回收率在95%-105%之间。结论:该方法操作简单易行,灵敏准确,选择性高,可作为啤酒中微量甲醛的测定方法。
Objective: To establish a determination method of formaldehyde in beer by spectrophotometry.Methods:In the alkaline condition,formaldehyde in beer reacted with 4-amino-3-hydrazino-5-mercapto-1,2,4-triazole(AHMT) to purplish red compound 6-mercapto-S-triazole-S-tetrazole,which could be measured at wavelength 550 nm by spectrophotometry.Results:The linearity ranged between 0.020.60 mg/L.The recovery rate 95%105%.Conclusion:The method is rapid,exact and reliable.So it adapts to determining formaldehyde content in beer.
