摘要
通过自然散射光照射对比的方法从天然抗氧化剂中筛选出两种理想的稳定剂——儿茶素和皮素，在２０日使用期内，将色素色价保存率分别提高了５３％和７３％，有效地增强了色素的稳定性。
The relation of chilli pigment stabitity with external environment is described. By the method of constract in natural light, catechin and quancitrin — two kind of perfect stabilizator have been sifted. They can raise pigment reserve quantity 53 percent and 73 percent, and raise effectively pigment stabitity.
