摘要 采用实时荧光PCR技术检测食品中致敏原芝麻成分。结果表明:采用芝麻管家基因2Salbumin mRNA基因的特异性检测引物和探针进行检测时,26种样品经实时PCR扩增,只有白芝麻和黑芝麻产生阳性的荧光信号,其余样品均不产生荧光信号。灵敏度试验结果表明,该方法对芝麻致敏原基因的检测灵敏度较高,可达到1mg·kg-1,符合痕量检测要求。 To identify sesame in food, a real-time fluorescent PCR assay was performed. The experiment resuhs showed that the primers and probe of 2S albumin mRNA gene of sesame could specifically identify white sesame and black sesame with 26 kinds of samples. Sensitivity test showed that 1 mg·kg^-1 for sesame of food could be detected,meeting the need of trace amount detection.
