摘要
研究了大蒜浸提液对亚硝酸盐的清除作用。考察了浸提温度、浸提时间、浸提液用量、pH值对清除率的影响,并通过正交试验确定影响其清除亚硝酸盐的最佳条件。
The elimination effect of garlic extract on nitrite was discussed in this paper. The affecting factors (extraction temperature and time, extract content, pH solutions) of elimination rate were studied. The optimal parameters were determined.
