摘要
姜汁提取液对亚硝酸盐具有清除作用。通过正交实验确定影响姜汁提取液清除亚硝酸盐的因素,结果表明以水为提取剂、浸提温度70℃、提取时间10min,反应时间15min的姜汁对亚硝酸盐的清除效果最好,其清除量为1μg/5.03g姜汁。
The effect of ginger juice eliminating the nitrites is certain. Through the orthogonal design was applied to confirm the factors that affect the removing rate of the nitrite. The result indicated that the water should be regarded as abstracting reagent, the reacting time of ginger juice was 15 minutes, the eliminating rate of nitrite was highest, abstracting temperature was 70℃, the abstracting time was 10 ninutes and the removing amount would be 1 μg/5.03 g.
