摘要
随着社会经济的发展，人们生活水平的提高，人们对油脂和食品的质量要求也越来越高。油脂由于含有不饱和脂肪酸而易于氧化酸败。常用的抗氧化剂有ＢＨＡ、ＢＨＴ、ＴＢＨＱ等，由于它们都有一定的毒性，所以应用就受到相当的限制。同时，柠檬酸及其酯在油脂中的溶解度较低，故效果也不好。Ｌ－抗坏血酸棕榈酸酯是一种安全、无毒、高效的脂溶性抗氧化剂，它可以有效地防止油脂氧化酸败。另外，它在食品、医疗卫生、化妆品等领域也有广泛的应用。Ｌ－抗坏血酸棕榈酸酯作为一种新型的脂溶性抗氧化剂就受到了人们的普遍关注。本文对Ｌ－抗坏血酸棕榈酸酯的功能、合成及其应用进行了综述。
With the development of economy and the improvement of people′s,people show more and more concern for the quality of oil and food.Oil is easy of deterioration and rancidity because of its unsaturated fatty acids.The common antioxidants are BHA,BHT and TBHQ etc.,but they all have poison to the human body.Citric acid or citric esters are not easy of solution in oil.These factors limit their using range.L-ascorbyl palmitate is a kind of safe and effective fatty antioxidant and is esay of solution in oil.So it is used to prevent oil rancitdity and deterioration.and is widely used in foods,cosmetic and other respects.As a kind of oil-soluble antioxidant,it has been concerned by more and more people.The paper summarizes the role,synthesis process and application of L-ascorbyl palmitate.
