摘要
本文研究了两种不同甘草提取物在猪油中的抗氧化作用,结果表明乙醇提取物抗氧化性高于乙酸乙酯提取物。乙醇提取物添加量达0.03%时,可与人工合成抗氧化剂BHT添加0.02%相媲美,其添加量越高抗氧化效果越好。同时还研究了二种提取物与其他抗氧化剂PG、增效剂类如脑磷脂、L-抗坏血酸、柠檬酸的混合作用,结果表明两种甘草提取物均与L-抗坏血酸有较好的协同效应。
The antioxydation of two kinds of licorice extracts in the lard was researched in the paper.The results showed that the antioxydation of ethanol extract was better than that of ethyl acetate,0.03% ethanol extract had the same antioxydation as that of 0.02% BHT (a kind of synthetic antioxygen),they all possessed better cooperative effect with LVc.The mixing actions of two kinds of licorice extracts with PG,cephalins,LVc and citric acid were also studied.
