不同丙酸杆菌代谢物对酵母菌抑菌作用的研究 被引量:10

Antimicrobial Activity of Metabolites of Propionibacterium Freudenreichii Against Saccharomyces sp.

摘要 以山梨酸钾作对照,对天然防腐剂费氏丙酸杆菌代谢物对酵母菌的抑菌特性进行研究。对比SLB、脱脂粉和葡萄糖作为主要碳源的培养基得到丙酸杆菌代谢物的抑菌活性,结果表明,第8d抑菌活性最高。在SLB和葡萄糖培养基中的代谢物对酵母菌的抑菌活性分别为2.6AU/mL和3.6AU/mL,在脱脂乳培养基中的抑菌活性最低,仅为0.9AU/mL。pH值越低丙酸杆菌代谢物抑菌活性越高。pH4.0时,丙酸杆菌代谢物的抑菌活性最高,为12.7AU/mL。 The antimicrobial activity of Propionibacteriumfreudenreichii against Saccharomyces sp. was studied in this paper. The antimicrobial activity of metabolites were investigated when P. freudenreichii were fermented in SLB, skim milk medium and glucose medium. The metabolites showed the highest antimicrobial activity when P. freudenreichii was cultured in glucose medium at 8th day. The antimicrobial activity of metabolites was 2.6 AU/mL and 3.6 AU/mL, when P. freudenreichii was cultured in SLB and glucose medium, respectively. The antimicrobial activity of metabolites was only 0.9 AU/mL when cultured in skim milk medium. The decline of pH led to an increas of antimicrobial activity, and the highest activity was 12.7 AU/mL at pH 4.0.
