摘要
采用不同浓度茶多酚对几种主要食用油脂进行处理试验,筛选出了能显示出较强的抗氧化效能(300~500)×10^(-6)浓度。增效剂Vc的应用,在猪油上能使茶多酚抗氧化效能的保护系数增加0.13。但对菜油、花生油无明显效果。
Some main oils & fats was treated by different concertractive teapolyphenols, it was shown (300-500) × 10^(-6) polyphenol has more affective antioxidative. In addition,the antioxidative activity of tea polyphenols on lard was increased 13%by adding Vitc,which did not show effects on rapeseed oil and peanut oil.
