摘要
介绍了西瓜汁类产品研发、冷杀菌方式、复合西瓜汁加工、真空脱氧及包埋技术、番茄红素提取、副产品与其它产品的综合利用等,综述了国内外西瓜加工的研究进展,并对西瓜加工业的发展提出了若干建议。
The research and development of watermelon juice products, cold sterilization, compound watermelon juice, vacuum deoxidation and embedding techniques, lycopene extraction and byproducts utilization were introduced in this paper. Furthermore, the research progress in watermelone processing was reviewed and some advice for further development of watermelon processing industry were put forward.
