驴肉蛋白质氨基酸分析与评价 被引量:12

摘要 采用氨基酸自动分析仪测定驴肉的氨基酸组成。结果表明驴肉中氨基酸总量为23.47%,其中必需氨基酸占氨基酸总量的39.41%。根据氨基酸评分(AAS),第一限制性氨基酸为异亮氨酸;根据化学评分(CS),第一限制性氨基酸为蛋氨酸+胱氨酸;必需氨基酸指数(EAAI)为65.48,驴肉蛋白质是一种优质的动物性蛋白资源。 Protein and amino acid composition were analyzed by automatic amino aci suhs showed that the total amino acid was 23.47%, the essential amino acids accounted for d analyzer. The rethe total amino acid as high as 39.41%. Based on amino acid score (AAS), isoleucine (Ile) was the first restrictive amino acid; based on chemical score (CS), methionine (Met) + cystine (Cys) was the first restrictive amino acid; essential amino acid index (EAAI) was 65.48 . Donkey meat was a kind of perfect animal protein resource.
