摘要
研究了板栗壳色素的溶解性,紫外-可见光谱,光、热及大气稳定性,部分化学性质、主要食品原材料和食品添加剂对色素的影响以及应用性能。结果表明:板栗壳色素是一水溶性色素。对光、热、大气及部分化学物质稳定,与淀粉和蛋白质染着性好、色率高,与主要食品原材料和食品添加剂混用性佳,是一种实用性强的棕色色素。
Characteristics and application of the pigment from the chestnut shell were studied.The results show that it is a water soluble brown pigment stable to heat,air, light and some chemical agents and gives high color density and coloring power with starch and protein.It can be well mixed with main food raw materials and additives and easily applicable to food industry.
