摘要
[目的]研究海带的脱腥和脱色技术方案。[方法]采用花茶处理海带进行脱腥,并用特制的脱色液对其脱色。[结果]结果表明,花茶用量1.5%,60℃下持续10 min脱腥最佳。25℃条件下,乙酐∶过氧化氢∶冰醋酸∶水(4∶5∶1∶20)脱色液脱色1 h效果较好。[结论]采用花茶脱腥以及过氧化氢处理液脱色可有效地改善海带的风味与色泽,且方法简单可行。
[ Objective ] The research aimed to study the plan of kelp deodorization and the decolorization technology. [ Method ] The method was to use the jasmine tea to make kelp doedorization and use the destaining solution specially made to make its decolorization. [ Result] The results showed that the best technology was that: flower-scented green tea amount used 1.5% , continued 10 min under 60 ℃. Under 25 ℃ conditions, the effects was good when using acetic anhydride:hydrogen peroxide: glacial acetic acid:water (4:5:1:20) to decolorize 1 h. [ Conclusion] Using the flower-scented green tea to make kelp doedorization and using the hydrogen peroxide processing fluidto make its decolorization could effectively improved kelp flavor and the luster, and the method was simple and feasible.
