荔波野生梅果实营养成分的测定和研究

摘要 [目的]为开发利用荔波野生梅提供依据。[方法]于茂兰国家级自然保护区内的洞塘乡随机采取荔波野生梅果实,观察其基本物理性状,测定其主要营养成分。[结果]荔波野生梅果实的果形指数平均值为1.16,单果重低于国内主栽品种,含水量80.00%左右,可滴定酸含量为5.3%~6.8%,可溶性糖含量为1.1%~1.5%,糖酸比为0.19~0.24,蛋白质含量为0.53%~0.66%,Vc含量为3.29~4.51mg/100g,K含量是国内主栽品种的10倍以上,Ca含量为国内主栽品种的4~6倍,Na含量则远低于国内主栽品种。荔波野生梅果实的主要营养成分含量与国内主栽品种相当。[结论]荔波野生梅是一种很有开发利用价值的食品资源,且具有良好的适应性。 [ Objective] The study was to provide the basis for the development and utilization of wild plum in Libo. [ Method ] The basic physical characters of wild plum fruit in Libo randomly selected from Maolan national nature reserve in Tongtang township were observed and its main nutritional components were detected. [ Result] The average value of fruit shape index of wild plum in Libo was 1.16. Its single fruit weight was lower than that of domestic major cultivar. Its water content was about 80% , titratable acid content was 5.3% - 6.8%, soluble sugar content was 1.1% -1.5%, sugar acid ratio was0.19-0.24, protein content was 0.53% -0.66%, Vc content was 3.29-4.51 mg/100 g. Compared with the domestic major cuhivars, K content was above 10 times higher, Ca content was 4 -6 times higher, Na content was lower, the content of the main nutritional components of wild plum fruit in Libo were equivalent. [ Conclusion] Wild plum in Libo was a food resource with well development and utilization value, and had a good adaptability
