摘要
利用分光光度法,研究了不同含量维生素E或维生素C对大豆磷脂脂质体的抗氧化保护作用及维生素C的存在和温度的变化对维生素E抗氧化作用的影响.结果表明,适量维生素E可明显抑制磷脂脂质体的氧化,含量越高,抑制作用越强;大量维生素C虽可起到抗氧化作用,但少量维生素C在铁离子的存在下却可起到促氧化作用;维生素C的存在对维生素E的抗氧化作用具有明显的协同作用;
The inhibiting effect of vitamin E(V E) and V C on peroxidation in soybean liposomal membranes system induced by 0 01M FeSO 4 solution was studied with spectrophotometer,and the effect of temperature on peroxidation of liposomal membranes was investigated as well.The results showed that the peroxication of liposomal membranes was inhibited effectively by slight amount of V E(0 075%),with increase of V E,the inhibition period was prolonged.In the pressence of Fe 2+ ,V C could enhances peroxidation of liposomal membranes at a concentration of 0 290% or lower,but inhibite peroxidation at 0 550%.It was observed that V C had a synergic effect on the anti peroxidation of V E.With increase of temperature, the peroxidation of liposomal membranes was enhanced.
