Determination of Nutritional Ingredients of Potentilla anserine

摘要 目的测定分析蕨麻的营养成分。方法用EDTA(乙二胺四乙酸)滴定法、凯氏定氮法、索氏抽提法等国家标准方法,测定分析了蕨麻中钙、铁、镁、磷、锌、碘、钾等7种化学元素,水分、灰分、蛋白质、总还原糖、粗脂肪、维生素A、B1、B2、C等营养成分。结果钾含量为655μg/g,镁9.16μg/g,蛋白质10.06g/100g,总还原糖9.78g/100g,维生素C3.88 mg/100g、维生素B11.45mg/100g,其他营养成分含量也很高。结论蕨麻具有很高的,食用价值和保健功能,是理想的药食两用植物。 Objective To determine the nutritionai ingredients of Potentilla anserine. Methods The ingredients in Potentilla anserine, including calcium, iron, magnesium, fosforus, zinc, iodine, potassium, water, ash, total reducing sugars, protein, crude fat ,vitamin A, vitamin B1, vitamin B2 and vitamin C, were determined by EDTA (Ethylenediamine tetraacetic acid) titratioa method, Kjeldah method, Soxhlet extraction method and other national standard methods. Results The contents of potassium, magnesium, protein, total reducing sugars, vitamin C, vitamin B1 were 655 μg/g, 9.16 μg/g, 10.06 g/100 g, 9.78 g/100 g, 3.88 g/100 g and 1.45 g/100 g, respectively. The contents of nutritional ingredients were also high. Conclusion Potentilla anserine possesses higher nutritional value, edible value and healthcare function, so it can be used as a food resource and a Chinese herbal medicine.
