摘要 膨爆特性是爆裂玉米的最重要的特性,膨爆的关键是子粒内部高压的形成。果皮和胚乳的致密结构是内部高压形成的重要保证。综述了近年来国内外对子粒本身的结构特性、外在因素的影响以及遗传因素等膨爆机理的研究。对今后的研究方向提出展望。 Expansion characteristic is the most important characteristic of popcorn. The key of expansion popcorn is the formation of grain internal high pressure. The compact structure of the pericarp and endosperm is an important guarantee for the formation of grain internal high pressure. In recent years, the researches on popcorn popping mechanism focused primarily on the structure characters of the grain, the influence of external and genetic factors. This paper is also put a prospect for future research directions.
