摘要
蔗糖是最常见的营养性双糖,蔗糖的大量食用对糖尿病患者等特殊人群有一定的影响。而将蔗糖进行生物改性,得到的功能性的甜味剂,不仅仍具有味甜又具有功能性,拓宽用途,适用人群更广;而进行物理改性可满足特殊应用要求。
Sucrose is a common nutritive disaccharide which, when consumed by a large amount, will have an adverse effect on such special group of people as diabetics. By changing the biological characteristics of sucrose, we can get a functional sweetener that is suitable for a wider variety of people. By changing the physical characteristics of sucrose, we can put it into many special applications.
