摘要
分析了芦笋罐头加工下脚料中的营养成分。结果表明:新鲜芦笋加工下脚料中富含营养成分,18种氨基酸含量达到730.33mg/100g,其中8种人体必需氨基酸含量占到总氨基酸量的32.92%(E/T),各种维生素、矿质元素含量丰富,并且含有一定量的黄酮类物质、芦笋粗多糖,有很好的开发利用价值。
Nutrient composition of discarded asparagus was analyzed.The resultshowed that the fresh discarded asparagus was rich in various nutrients. Contents of 18 kinds of amino acids were 730.33 mg/ 100 g, E/T was 32.92% . Contents of vitamins and mineral elements were abundant, and there were some flavonoids and crude polysaccharides in it. It has the great value of exploiture.
