摘要
对鲢鱼 (Hypephthalmichtysmolitrix)、鲤鱼 (Cyprinuscarpio)、草鱼 (Ctenopharyngodon idellus)、青鱼(Mylopharyngodon piceus)、鲫鱼 (Carassius cuvieri)、黑鱼 (Channa striata)和鳊鱼 (Megalobramaamblycephale) 7种淡水鱼肌肉和内脏中脂肪酸的组成进行了分析 ,结果表明 ,鲢鱼肌肉和内脏中脂肪酸组成与其他淡水鱼相比有较大差异。鲢鱼肌肉和内脏中含有较高的 EPA(icosapentaenoic acid:二十碳五烯酸 )和DHA(docosahexaenoci acid:二十二碳六烯酸 ) ,多不饱和脂肪酸的比例达到了 54以上 ,其中 n- 3(ω- 3)与 n- 6(ω- 6)脂肪酸的比值分别为 1 .7(内脏 )和 1 .9(肌肉 ) ,而其他几种淡水鱼的 EPA和
The fatty acid composition of seven major species of freshwa te r fish muscle and guts (silver carp: Hypephthalmichtys molitrix ; common carp : Cyprinus carpio ; grass carp: Ctenopharyngodon idellus ; black carp: Mylopharyngodon piceus ; crucian carp: Carassius cuvieri ; snakeheaded fish: Channa striata ; bream: Megalobrama amblycephale) was analyzed. The icos apentaenoic acid (EPA: 10 9 %~12 5% ), docosahexaenoci acid (DHA: 13 8 % ~14 4% ) in H. Molitrix muscle and guts were higher than those of other s ix specie s of freshwater fish. The polyunsaturated fatty acid (PUFA: 52 6 %~55 1% ) and n-3 PUFA were also more abundant in H. Molitrix than other six fish species .
