根据窖池和糟醅状况,首先培养优质的窖泥进行改窖;培养优质人工窖泥的关键主要取决于“菌种”、“培养方法”、“配方”等[1];在粮糟入窖时拌入底糟,粮糟∶底糟为4~5∶l。
According to the status of pits and fermented grains, the first step is to culture quality pit mud to improve pits quality.
