蔬菜中叶绿素及叶绿素铜钠盐抗诱变活性测定

摘要 本实验在测定莴苣叶、油菜、青椒、茱萸、芹菜中的叶绿素含量的同时,采用Ames标准平板掺入法测定了以上蔬菜提取液中叶绿素的抗诱变活性及叶绿素铜钠盐的抗诱变活性,结果表明:抗诱变活性的大小依次为莴苣叶、油菜、青椒、茱萸、芹菜。抗诱变活性的大小与叶绿素的含量有关。叶绿素铜钠盐有抗诱变作用。 The contents of chlorophyll in lettuce leaves ,rape,green pepper,ailanthus prickly ash,celery leaves were determined.The anti mutagenic activity of chlorophyll and chlorophyllin in the above begetables were also determined by Ames test using standard plate incorporation procedure.The results show that the anti mutagenic activity in decreased sequence is as follows:lettuce leaves,rape,green pepper,ailanthus prickly ash, celery leaves.The magnitude of anti mutagenic activity is relevant to the content of chlorophyll.Chlorophyllin has the anti mutagenic activity and it has certain value of use.
