摘要
本文综述了常见甜味剂的主要种类及其理化性质,比较了糖醇的结构、性质和生理功能,结合笔者的最新研究结果讨论了甜味剂和糖醇的致龋性。
Structures and physico-chemical properties of sweeteners including sugar alcohols were reviewed in this article. The cariogenicity of sweeteners was also discussed together with the results obtained by authors.
