介绍了结冷胶的理化特性、发酵生产、生物合成途径及对代谢途径进行遗传改造的研究进展,并对结冷胶的发展前景进行了展望。
This paper gives a review about physical and chemical characteristics, fermentation, biosynthesis pathway and genetic engineering of metabolic pathway design and regulation of gellam gum. Besides, some prospects about gellan gum are mentioned.
