南瓜多糖铁(Ⅲ)配合物的合成及一般性质研究 被引量:4

摘要 用热水浸泡法从南瓜中提取南瓜多糖,在碱性条件下,南瓜多糖水溶液与三氯化铁反应合成南瓜多糖铁配合物(PPC),并对PPC的一般理化性质进行了测定。结果表明:PPC是深棕红色无定型粉末,易溶于水,且水溶液呈中性,在pH值3~12范围内不沉淀,不水解;PPC的水溶液中不存在游离的铁(Ⅲ);PPC中的铁(Ⅲ)易被抗坏血酸还原成铁(Ⅱ)。 Pumpkin polysaccharide was extracted from pumpkin with warm water, then pumpkin polysaccharide-Fe (Ⅲ)compIex(PPC) was synthesized with pumpkin poIysaccharide and FeCl3 under the alkaline condition, then the physicochemical property of PPC was determined.The results showed that PPC is a kind of heavy red brownish and shapeless powder. It is water soluble, the solution is neutral. In water solution, PPC would not be precipitated or be hydrolyzed when pH was 3 to 12 .There is no Fe( Ⅲ )in the PPC solution. Fe( Ⅲ )in PPC could be reduced to Fe ( Ⅱ )by ascorbic acid. So PPC would be expected to be exploited and used as an better iron-supplementary.
