摘要
利用GZ-I型热风干燥试验台对番茄薄片的干燥特性和干燥工艺进行了研究,探讨了预处理、风温、风速对干燥速率及干燥制品的影响规律。通过正交试验,求得了影响干燥制品色泽、复水性能,v_c含量的主次性能参数以及较佳参数组合。同时,借用FicK′s第二扩散定律,建立了干燥过程的数学模型。
Researches on the a ir- dryi ng performance and technology for tomato slice were con-ducted on the air- drying test desk(model GZ-1). The effect of pretreatments as well as air temper-ature and velocity on the drying performance were also investigated. By using the orthogonal de-sign, the order of importance of parameters influencing the colour and water restoration perfor-mance and Vc content for the finished product of tomato slices were determined. Finally,a mathe-matical model of air-drying process for tomato slices has been established on the basis of Fick′s sec-ond law of diffusion.
