由葡萄糖母液合成焦糖色素的工艺研究 被引量:1

摘要 介绍了以葡萄糖母液为原料,在催化剂作用下,经一步反应直接制备高色率的焦糖色素,并探讨了催化剂、葡萄糖母液的波美度、反应温度和反应时间等因素对色率的影响。最佳反应条件:葡萄糖母液的波美度为30,催化剂用量为葡萄糖母液质量的5%,反应时间30min,反应温度为145°C,焦糖色素的色率可达75526EBC单位。实验研究表明,氨水催化剂具有催化活性高,价廉易得,后处理工艺简单,无腐蚀性,无环境污染等优点。 One step synthesis of caramel pigment from dextrose mother liquid as raw material in the prseence of catalyst was introduced. The effects of catalysts, baume degree of dextrose mother liquid, reaction temperature and reaction time on the color of the pigment were examined. The optimum conditions were as follows:baume degree of dextrose mother liquid 30; amount of catalyst, 5%; reaction time, 30 min; and reaction temperature, 145°C. The colority of the caramel pigment can reach 75526EBC. Experimental results showed the ammonia catalyst had many advantages such as high activity, easy preparation, low cost and easy post-treatment. It was also non-corrosive and non-pollutant to the environment.
