摘要
以湖北省茶叶种质资源圃保存的24个绿茶品系作为供试材料,取其春梢一芽二叶和一芽五叶蒸青固样,进行水浸出物、茶多酚、氨基酸、咖啡碱、儿茶素组分和氟元素水平等生化成分分析。结果表明,供试的24个绿茶品系均具有低氟特性(【300 mg/kg),07-7-45、07-7-4、07-7-31、04-3-1和07-7-25具有超低氟特性(【120 mg/kg);01-4-7和04-3-1具有高氨基酸(≥4%)特性;04-3-8具有高表没食子儿茶素没食子酸酯(EGCG)特性;04-3-1和01-4-7两个品系酚氨比小于6,07-7-6和07-7-25酚氨比介于6~7之间。
Biochemical components including water extracts,polyphenols,amino acids,caffeine,catechin components and fluoride levels in the one bud and two leaves or five leaves of 24 tea materials which were coming from Hubei tea germplasm repository were analyzed.The results indicated that all of the materials had the character of low fluoride level(<300 mg/kg),and 07-7-45,07-7-4,07-7-31,04-3-1 and 07-7-25 showed ultra-low fluoride content(<120 mg/kg);01-4-7 and 04-3-1 had the character of high amino acids content(≥4%);04-3-8 had the character of high EGCG content;01-4-7 and 04-3-1 had lower ratio of polyphenols to amino acids(TP/TA<6),and 07-7-6 and 07-7-25 had low ratio of polyphenols to amino acids(6≤TP/TA≤7).
