摘要
纯生啤酒是不经巴氏灭菌、采用无菌酿造和无菌包装技术生产的啤酒。论述了纯生啤酒生产过程中无菌气体、酿造用水、发酵系统、过滤系统。
Pure draft beer refers to beer never underwent pasteurism and produced by the techniques of bioclean brewing and bioclean packing. The sanitary control requirements and microbial detecting requirements of bioclean gas, water for brewing, fermentation system, filtration system and packing system in the brewing of pure draft beer were illustrated in this paper.(Tran.by YUE Yang)
