摘要
阐述了果蔬渗透脱水的定义和技术特点,介绍了渗透脱水在国内外的研究和应用现状,探讨了该技术在生产应用中存在的问题和应用前景。
The definition and technological characteristics of osmotic dehydration were formulated in this paper. Meanwhile, this study introduced current research and application of osmotic dehydration both inland and outland. Finally, the existing problems and application prospects of the technology in the osmotic dehydration of fruits and vegetables were discussed.
