摘要
贮藏温度是关系贮藏保鲜成败的关键因素 ,测定大樱桃中晚熟品种先锋在低温结冰过程中温度的变化 ,确定了樱桃冰点测定所需冰盐混合物的适宜混合比例为冰∶盐 =4~ 6∶1;先锋樱桃果汁的冰点温度为 -1.6℃~ -1.7℃左右 ;先锋樱桃的冷藏保鲜温度应维持在 -1℃~ 1℃左右。
Storage temperature was fatal factor for refreshing and storage. The temperature changing process of pioneer cherry juice was tested in low temperature in the paper. The proportion of mixture of ice and salt for testing cherry freezing point was : ice∶salt=4~6︰1. the freezing point of pioneer cherry was around -1.6℃~-1.7℃. the storage temperature was around -1℃~1℃ for storage of pioneer cherry.
