摘要
通过合成不同取代度的辛烯基琥珀酸淀粉酯,采用旋转粘度计研究了不同产品淀粉糊的流变特性.结果表明,所有淀粉样品糊均呈现假塑性流体特征.取代度越大的样品,其糊的表观粘度越高,触变性相应减弱.
Starch octenyl succinate anhydride (SSOS) with different degree of substitution was synthesized. The rheological properties of different products were studied by rotary viscosimeter. The results showed the rheological properties of starch pastes changed apparently at different concentrations and temperatures.
