本文简要阐述了食品风味物质的特点 ,介绍了食品风味物质的提取、浓缩、分离分析测定的常用方法技术及其该项研究对香精香料行业和食品工业发展的意义。
This article gives a brief of the characteristic of the food's flavor, it not only shows the usual method and technology of how to extracting, concentrate, analyze, separate and determine the food flavor, but also shows the importance and determination of it in the flavors and the food industry's field.
