摘要
利用草木灰替代氧化铅制作松花蛋,结果表明:草木灰完全可以替代氧化铅在松花蛋加工中的作用,产品符合GB T9694-88质量标准,没有氧化铅的副作用且口感好;用料少,较传统工艺制作节约成本64%。
The use of plant ash instead of lead oxide to make preserved egg.The showed that plant ash could completely take the place of lead oxide to make preserved egg.The processed product accorded with the guality standand of GB/T9694-88 without any side effect of lead oxide and had good taste.This procssing method used less raw materials and could save 64% of cost as compared with the traditional techuology.
