摘要
以猪油为底物 ,采用碘量法研究了咖啡渣提取物的抗氧化作用及与其它物质的协同作用。结果表明乙酶和丙酮提取物均具有一定的抗氧化能力 ,且抗氧化效果随其用量的增加而加强 ;Vc 和柠檬酸对咖啡渣提取物具有一定的协同效应 ,且Vc 的增效较明显。
The antioxidative activites of the extracts from coffee residue were studied by Na_2S_2O_3-I_2 titrimatric method using lard as substrates.The extracts obtained with ethanol and acetone performed certain antioxidative effects.Vitamin C and citric acid showed synergistic effects to the antioxidation of the extracts.
