摘要
采用经典方法测定了南阳彩色小麦之一的灰色小麦中的粗蛋白、粗纤维、粗脂肪、粗灰分、面筋质和17种氨基酸含量.结果表明,灰色小麦氨基酸种类较为齐全,含量较高,粗蛋白、粗脂肪、粗纤维和赖氨酸含量比普通小麦分别高28.0%,26.7%,9.7%和85.7%,是一种新的优质小麦种质资源,具有良好的开发前景.
Main nutritional compositions of grey wheat,one kind of color wheat from Nanyang were analyzed. The contents of protein and fat were 28.0% and 26.7% higher than those of general variety respectively. The grey wheat also had diverse amino acids, especially Lys ,whose content was 85.7% higher than that of the average .It indicated that the grey wheat protein was better and balanced relatively. The grey wheat, as a new wheat variety of fine quality a promising development prospect.
