摘要
纳豆菌为具有很多生理功能的益生菌,能开发多种有保健功能的产品。以实验室选育的纳豆芽孢杆菌(Bacillusnatto)BN.0301为出发菌株,研究其液体发酵,对碳源和氮源进行了初步筛选,并确立了其发酵条件为:种龄18hr,接种量1%,温度30℃,摇瓶转速180rpm,装液量40ml/250ml,初始pH值6.0,摇瓶发酵周期33hr。
Bacillus natto, with which many health products can be developed, is a probiotics strain with many physiological functions. The liquid fermentation by the BN.0301 strain isolated from Natto was studied in detail. The results showed the best fermentation conditions are pH 6.0, 2% inoculum of 18 hours, and the growth temperature is 30 ℃, shaker rotational speed is 180rpm, the volume of fermentation medium is 40mL/250mL. In addition, the carbon source and nitrogen source were determined.
