摘要
以大豆毛油为原料,通过水化脱胶、丙酮去油和乙醇萃取等过程,提取了纯度较高的卵磷脂。较佳的工艺条件为:加水量为大豆毛油体积的5%,80℃水化脱胶70min,总量15倍粗磷脂体积的丙酮去油3次,95%乙醇在50℃萃取3次。
Using soybean oil as raw material, pure soybean lecithin was obtained by degumming with water, defatting with acetone and extracting with ethanol.The optimum technological conditions obtained by orthogonal experiments were that the volume of water added was 5% of the volume of soybean oil, degumming temperature with water was 80℃, hydration time was 70 min, defatting with acetone for 3 times, extraction temperature with ethanol (95%) was 50℃.
