摘要
介绍了淀粉改性剂与淀粉分解剂的区别 ,并在阐述淀粉大分子结构和其可变性的内因的基础上 ,介绍了淀粉改性剂的常用变性方法和我国淀粉改性剂的种类和研究现状。
In this article, the difference of the starch denaturant against the starch decomposer is infroduced. Based on the expatiation on the starch molecular structure and the intrinsic factor of denaturalization,the modified technique of the starch denaturant is discussed with a detail presentation about the development of the research given.
