引起高温火腿胖听的细菌鉴定

摘要 采用常规的细菌学分离方法,从胖听的高温火腿中分离出一株产生芽孢没有荚膜的革兰氏阳性厌氧杆菌。该菌发酵葡萄糖,产酸产气,蔗糖不定,乳糖和杨苷不发酵,细菌具有酯酶活性,不产生外毒素,对实验动物无致病性,其特性符合产芽孢梭菌(Cl.sporogenes)。实践证明,该菌可以引起罐头食品的腐败或变质。 A gram positive rod, isolated from plumping ham by means of conventional bacteriological methods, was not encapsulated but produeed spore. The Isolates, with lipase positive, was motile, did not produee toxin, was not pathogenie for laboratory anin(?)ls, fermented glucose and maltose with the production of acid and gas, sucrose fermentation was variable, lactose and saliein was not fermented. The bacteria were identified as Cl. sporogenes. Evidence showed that the bacteria could make canbed foodstuff rotten or deteriorate as well as cause considerable cconomic losses and should be taken seriously.
