摘要
由于5-羟甲基糠醛对啤酒老化具有指示作用,通过研究啤酒中5—羟甲基糠醛水平的高低与啤酒存储期间老化程度存在的相关性,利用高效液相色谱法,测定啤酒中5—羟甲基糠醛含量,来评价啤酒风味老化的程度。
5-Hydroxymethyl furfural (5-HMF) is an index compound for beer staling.A correlation exists between the organoleptically determined degrees of staling flavor in beer and 5-H M F levels during storage.Ex- periments performed to measure the level of 5-HMF using High Performance Liquid Chromatography (HPLC) and proved for evaluating the degree of beer staling successfully.
