摘要 三酰甘油酯是由长链饱和脂肪酸和短链脂肪酸 (乙酸、丙酸和 /或丁酸 )与丙三醇酯化所得。作为一种脂肪代用品 ,不仅具有天然油脂的物理性质 ,其热值仅为普通食用油的一半[1] 。探讨了通过酯交换法合成三酰甘油酯的方法与途径。通过研究得知 ,将三乙酸甘油酯和三丙酸甘油酯与硬脂酸甲酯按 11∶1∶1的比例在甲醇钠的催化下 ,82~ 84℃减压蒸馏下反应 2 .5h ,可制得常温下为脂状固态的三酰甘油酯。 The triacylglycerol are the ester mixtures composed of long chain saturated fatty acids and short chain fatty acid esterified with the glycerol. As a fat substitute,its physical chemical properties conform to fat,and its calories approximately half of the calories of a normal edible oil.The thesis discussed the method of synthesis of triacylglycerol.In the reaction,sodium methoxide acts as catalyst,the ratio of glyceryl triacetate,glycerin tripropionate and methly stearate is 11∶1∶1,2.5 h of decompression distillation,temperature 82~84℃,the product of this reaction triacylglycerol is smectic solid at normal atmospheric temperature.
