摘要
研究表明,应用液体深层发酵技术发酵所得菌丝体与野生子实体具有相似的营养成分和生理功效。因此,液体深层发酵技术应用于食用菌生产,不仅可以使食用菌菌丝块在市场上销售成为现实,同时,其发酵液可以提取真菌多糖,制取抗肿瘤食品。
Study and application of fermentation technique in edible mushroom cultivation has a history more than 40 years, especially in the recent 20 years. Studies resulted that mycelium by fermentation had similar nutrition components and physiological functions with wild fructification. Therefore, application of fermentation technique in edible mushroom cultivation would realize supply of edible mushroom mycelium, meantime, polypeptide could be extracted from fermentation solution.
