植物甾醇和植物甾烷醇在脂肪酶催化作用下同脂肪酸酯化或同脂肪酸甲酯或三酰甘油酯交换可形成植物甾醇酯和植物甾烷醇酯。
Phytosterol and phytostanol have been converted to the corresponding fatty acid esters via lipase catalysed esterification with fatty acid or transesterification with mythyl esters of fatty acid or triacylglycerols.Studies on the enzymatic synthesis of phytostyerol and phytostanol esters were described.
