摘要
我国是个水产大国,利用淡水、海水产低值小杂鱼开发仿真食品,是我国营养食品开发的一个重要方向,但在其加工技术研究方面起步较晚。分析了我国开展仿真食品研究的有利条件,介绍了国内外仿真食品加工技术的研究内容和成果,提出了我国仿真食品加工技术的发展方向。
China is rich of aquatic products. Developing simulated food by utilizing low valued, small and motley fish of fresh water or oceans is an important direction for nutritional food development in China. However, the research on the above issue has started relatively later in China. The paper analyzes the favorable conditions for such research, introduces the techniques and achievements in the area both in China and abroad, and presents the development direction of simulated food manufacture techniques in China.
