食品中还原型维生素C在酸性条件下能够与碘-淀粉体系中的碘结合,生成稳定的络合物,其绝对吸光值符合朗伯比尔定律,可比色测定。其最大吸收波长为610nm,线性范围为1~20μg/mL(r=0.9993),回收率在94.03%~98.90%之间。
It has been already found that the vitamin C can combine iodine into a kind of stable matter in acid medium.The color fades quickly.Beer's law is obeyed for its absolute O D value.The concentration of vitamin C in the food can thus be determined by the spectrometry.The maximum absorptive waveleng th is610nm and the linear rang e is1~20μg /mL (r=0.9993).The recovery rate is in the rang e of 94.03%~98.90%.This method is simple and easy.
