摘要
‘脆枣’采后用GA3 30mg·L-1处理 ,较好地保持了硬度 ,抑制了乙醛、乙醇含量的上升以及乙醇脱氢酶和多酚氧化酶的活性 ,降低了呼吸强度和乙烯释放速率 ,推迟了酒化和褐变的发生。
In this experiment effect of postharvest treatment with GA 3 on physiological and biochemical changes of'Cui jujube'fruit during cold storage was studied.The results showed that the treatment significantly delayed the decrease of jujube fruit firmness, inhibited the increase in contents of acetaldehyde and ethanol and the activities of alcohol dehydrogenase and polyphenol oxidase, reduced respiratory intensity and rate of ethylene production, slowed down the occurrence of alcoholism and flesh browning.
