摘要 以豆腐、豆浆为代表的大豆食品,可以说是人类饮食谱中最优秀的代表之一.大豆与大豆食品不仅养育了中华民族,还支持了中华5000年可持续农业,从汉字的"禮"、"艶"、"豐"也可看出豆在中国人文化生活中的地位.发达的农业背景使得谷类和大豆食品成为东方农耕民族的主要食物,中华民族也习惯和嗜好柔嫩的豆腐以及豆浆的清香,"豆浆+油条"甚至成了许多人固定的早餐.然而,近些年我国许多厂家盲目崇洋,误以为西方对大豆加工利用的方法才是新潮流,使得我国传统的豆腐、豆浆等食品发展几乎停滞. Bean Products are always the important part of good traditional food in China and world, represented by Bean curd and Soya-bean. In the history of 5,000 years in China, bean products played an important role in feeding people and became the absolutely necessary food. However, nowadays many Chinese enterprises worshiped foreign things and considered the technology from west countries as new trend. Thus, China traditional processing way was forgot and fell behind the world. In fact, western people are not used to Beany flavor that attracts Chinese, so they made efforts to avoid it. According to writer's opinion, Chinese enterprises should develop the new way on the base of traditional food for facing challenge.
